In addition to being a superior specialty, PGI Speck Alto Adige represents an essential part of Alto Adige’s nutritional culture and tradition. From the small to the large producer, quality craftsmanship is one of the fundamental characteristics in making superior speck.
In its production, speck has not experienced the compromises regarding the compliance and respect of the "eight golden rules": strict guidelines that ensure the quality of authentic speck. Each producer can still personalize the product in the special blend of flavorings (selecting what herbs and spices to use and how much) and in deciding how much to accentuate the smoky flavor.
