Südtiroler Speck mit Steinpilzen

Speck Alto Adige PGI with porcini mushrooms

Serves 4:
200 g / 7 oz sliced Speck Alto Adige PGI,
1 fresh porcini mushroom,
20 g / oz arugula,
40 g / 1.4 oz parmesan cheese shavings,
salt and pepper,
4 tbsp extra virgin olive oil,
2 tbsp traditional Modena balsamic vinegar.

Arrange Speck slices on a serving plate. Slice mushroom with a truffle slicer and arrange on top of Speck. Cover with washed and dried arugula and Parmesan shavings. Dress with a mixture of salt, pepper, oil and balsamic vinegar.
